Addie Fraser’s Fresh Blueberry Pie.
4 cups fresh blueberries
3/4 cup water
1 tablespoon butter
1 cup sugar
3 tablespoons cornstarch
1 dash salt
1 dash cinnamon
1 tsp lemon juice
1 nine inch pie shell(baked)
whipped cream for garnish
Procedure:
1. Simmer 1 cup blueberries with water for four minutes
2. Mix dried cornstarch with sugar then add salt, cinnamon and lemon juice.
3. Cook until thick and translucent.
4. Mix gently with remaining blueberries and pour into baked 9* pie shell.
5. Chill for one hour and top with whipped cream, if desired, before serving.
This is the recipe as I received it. But …
I put the three cups of fresh blueberries into the baked pie shell and after cooking the cornstarch mixture til thick and clear and shiny, pour that mixture over the berries in the pie shell, moving the berries a little bit to let it seep down around them. This is less damaging to the fresh berries and looks great.
This pie can be done with peaches too,
